Lemon Coconut Cookies
Serves: 15 mini cookies Prep time: 5 minutes - Cooking time: 15 minutes
1 cup brown rice flour
1⁄4 cup coconut oil, melted
2 tbsp rice malt syrup
1/3 cup desiccated unsweetened coconut
2 tablespoons lemon juice + zest from 1⁄2 a lemon
1/2 teaspoon vanilla powder
1/2 teaspoon baking soda
Pinch of sea salt
25g 85 per cent dark chocolate, melted
1. Preheat oven to 180 degrees and line a baking tray with baking paper.
2. Add all ingredients into a mixing bowl and combine with your hands.
3 Mould the mixture into 12 equal sized cookies and place on the baking tray.
4. Place in the oven and bake for 15 minutes, until lightly golden.
5. Remove and drizzle with melted chocolate. Serve immediately.
